I think a different angle of the sunflower might be better, like a side view so
it looks more 3D and realistic. I think the pollen should be more scatter. I
also think that the background should be different, it's all greyscale, is that
intentional

Sounds like you went through a few hoops to get what you did.  It's a good start
if this is the first attempt at this medium.  It's certainly not a simple
